Peppers stuffed with bulgur wheat and minced beef

halved top to bottom (or use half the yoghurt and peppers and save the wheat mix for another meal)

Method

Still being tweaked.

Can be be adjusted to be a main dish or a side dish by changing the ratio of meat to wheat.

Dry fry the meat for a few minutes until light brown.  Add garlic and spices continue to fry for 1 minute or so.  

Add bulgur wheat and stock and bring to a simmer.  Cover and simmer for ten minutes consider adding more stock if needed.  At the end stir in half of the parsely

Fill the halved peppers with the wheat mix and bake for 20 minutes.

Mix the remaining parlsey into the greek yoghurt and once the peppers are cooked put a spoonfull on top of each and serve
