Method

In progress.  I used more sweet potato and found it a bit sickly (others liked it).  Might be nicer with normal potatoes and/or carrots

Fry the onion very gently in the oil for ten minutes until soft.

Add the garlic, ginger and chilli and fry for another minute or two.

Add the spices and fry for another minute.

Add the sweet potato and stir to coat (not sure this does anything in the long run) before adding the stock and the lentils.  Bring to boil and simmer gently for 20 minutes until the lentils are tender and the potato almost falls apart (avoid stirring too much).

Stir in the chard/spinach to wilt.  The original recipe suggested serving with raw spring onions and Thai basil on top.
