Method

Fry the onions and ginger until soft (5 minutes?) then add garlic and chillis for another couple of minutes.  Add the rest of the ingredients and simmer for 30 minutes or more uncovered to reduce.  If not being used immediately put into sealed container whilst still hot and refrigerate once cold.
