Pearl barley and mushrooms

Method

This is from memory so will need tweaking

Simmer the pearl barley, lemon juice and thyme in the stock for 15 mins.  Drain and return to saucepan.  Cover with doubled teat towel then saucepan lid and leave for 10 minutes.

Meanwhile fry the onion for a few minutes then add garlic for one minute and finally the mushrooms for a few minutes.  Fry/simmer gently adding a pinch of salt and/or msg just before the end.

Mix briefly to avoid crushing the pearl barley and serve.
