Method

Fry onion to soft then add peppers and garlic and fry for a few more minutes.

Add curry powder and fry briefly.  Add other ingredients except lemon juice and simmer for 30 mins (uncovered if coconut milk is very thin) adding lemon juice for the last few minutes.  First time I then let it sit for an hour and then warmed it up.

Serve with rice, peas and sweetcorn
