Method

Adapted from https://www.eatingwell.com/recipe/280185/breakfast-beans-with-microwave-poached-egg/?printview

  1. fry onion for five minutes until soft
  2. add pepper and cumin and fry for another two minutes
  3. add other ingredients and reduce until no free liquid but still moist
  4. mix in the greens to wilt and serve

Original recipe served with poached eggs, grated cheese and sliced avocado but I'm not convinced.  Cooked chicken and avocado diced might work.  It could be served as a side dish to most things as it is a very light flavour (see lentil stew with halloumi recipe).
