I suspect some beans could replace part of the barley (in which case reduce water)

Method

From memory so quantities will need tweaking

  1. dry fry chorizo until the oil comes out and the slices brown.
  2. add olive oil and fry the carrot for five minutes.
  3. add the onion and fry for another five minutes
  4. add ginger and continue to fry for a couple of minutes
  5. add garlic and fry for another couple of minutes
  6. add mushrooms and continue to fry if you want them mushy
  7. add water and all other ingredients
  8. simmer gently for 55 minutes

Should work well adding greens for the last few minutes to wilt.
