Method

This recipe makes twice as much sauce as you need for 500g of pasta and 200g of feta (to use a whole packet of beetroot).  Freeze half after blending.

Blitz all except feta and herbs in food processor/blender until smooth.

Crumble feta and mix in chopped herbs.

Add to pasta after cooked and mix in.  Serve and sprinkle on feta and herb mixture.
