Method

Season chicken all over and cook in a 12 inch skillet until browned (3 to 5 minutes per side

Remove and fry onion and peppers until just starting to soften (5 minutes) seasoning with salt and pepper

Add the chillis, cinnamon, garlic, and cumin and cook for a further two minutes

Add the black beans and tomatoes, season and mix well

Add the hot stock and bring to a simmer

Sprinkle the rice over the top (the bean mix will protect the rice from burning) and place the chicken on top of the rice (skin side up)

Cook for 40 minutes uncovered at 180 degrees (fan)
