Optionally add garlic and dried or fresh chilli.
Fry the onion gently in a tablespoon of oil for five minutes then add ginger and fry for another few minutes. Add all other ingredients and bring to simmer stirring. Simmer for 15-20 minutes (or longer) covered or uncovered (to reduce liquid so the mix is moist but not sloppy).
