Method

Mix all ingredients except chicken.
Slice chicken into strips (< 1 inch thick) and mix with one third of sauce to marinade for an hour or more
Skewer chicken if required
Place marinaded chicken into oiled baking trays and cook for 20 minutes at 180-200 or grill
Meanwhile heat remaining sauce and simmer adding more water if needed
Add chicken to sauce or serve on skewers with dip or pour on sauce with rice
