Fry the onion and ginger for 2-3 minutes before adding the garlic for another two minutes.
Add these and continue frying for a minute or two to caramelise:
Add these and mix thoroughly:
If the coconut milk is especially thick you may need to add a small amount of water.
Heat and serve with chicken pieces or skewers of chcicken and veg.
