Method

Mix all ingredients except cornflour and chicken in a saucepan.
Heat until simmering, stirring regularly
Coat chicken pices in cornflour
Add chicken and simmer for 5 minutes
Add cashews or other optional ingredients
Serve with rice or allow to cool for use later
To freeze leave out cornflour and add when reheating
