Method

Saute onions in oil and butter in 6 litre pot
Add all other ingredients except for cream, fish and parsley (potatoes should be just covered)
Simmer until potatoes are done (10 to 15 mins)
In a separate pot gently heat the cream until steamy but not bubbling (stir constantly)
Add fish to the pot with potatoes once those are done and bring back to boil
Add the heated cream and use a very low heat (below simmer) uncovered until fish is cooked through (10 mins)
Cover and leave to rest for 30 mins to improve flavour
Serve sprinkled with chopped parsley
