Method

Melt butter in pan with oil.  Add artichokes and salt, cover and cook for 15-20 mins until cooked but not coloured.

Add milk and water.  Simmer for 10-15 mins.  Blend and sieve.

Salt and sugar to taste.  ½ tspn each?
