Method

Soften the onions (do not brown) - 15mins in the oil and butter (Jamie Oliver says do with potatoes 25-30 mins total and flip them just once)

Add potatoes, cover and cook for a further 15-20 stirring as little as possible to ensure even cooking

Add garlic (or cheese, peppers, chorizo or use other herbs or leftovers) , stir in then add eggs (JO adds salt and pepper) (I added garlic after potatoes)

Cover and cook for 20mins at which point the edges should be golden brown but the middle still wobbly.  Turn over for 5 more minutes
