Method

  1. Melt butter and gently fry flour for a minute or two whilst warming the milk in the microwave or another pan to hand hot or a little more
  2. Slowly add milk stirring continuously (a tablespoon for first go then increase by 50% each time)
  3. Heat gently until just before bubbles appear - stirring continuously
  4. Add cheese, stir until smooth
  5. Heat again until it thickens and serve
